Let's share some of tried & true recipes! I am always looking to try new recipes, especially when I'm cooking for HIM. It's even better if they can be cooked Rachel Ray style, 30 minutes or less...

Roasted Green Beans..

I got this idea from the other board, but I own it now! LOL

Take Green beans, as many or as little as you like, I can eat a whole pan myself! Wash and chop the ends off and dry them. I sprinkle them with olive oil, usually no more than 2 tablespoons. Slice white onions and sprinkle throughout. Then I season with sea salt, fresh ground black pepper and jerk seasoning and maybe a little chili powder if I want. I toss them around & bake for about 20 mins on 375 or 400 in the oven. They are delish! Sometimes I mix broccoli in there also...

I wanted to try it with asparagus, but haven't gotten around to it.. I do it with broccoli all the time too!

I got another quick recipe I'm going to post later that someone shared with me and I made over the weekend.

I have that one!
It is one of my faves. They have some really nice dressings in that one that go well with a lot of stuff. The ginger carrot is nice!

I bought this at trader joes and fell in love so now I found a recipe to make it

Balela – chick pea and black bean salad
A quick, simple, and nutritious salad! Balela is a Middle Eastern salad with chick peas, black
beans, parsley, and spices. There are variations that use mint, cumin, and other flavorings, but
this one is pretty basic. Feel free to experiment! The salad is very healthy with plenty of protein
and fiber from the beans. Serve with good rough peasant bread and red wine. Boun appetitio!

1 15 oz. can garbanzo beans (chick peas), drained
1 15 oz can black beans, drained
2 ripe tomatoes, chopped
½ chopped onion
1 clove garlic, minced fine
3 TBS extra virgin olive oil
Juice of one lemon (or 2 TBS of bottled lemon juice)
½ cup chopped fresh flat leaf (Italian) parsley
Salt and fresh coarse ground black pepper to taste
Combine all ingredients, mix well. Allow to sit for 15-30 minutes. Serve at room temperature.
Serves 4.
Note: best served at room temperature but will keep for days in the refrigerator.

I'm going to try this! Chickpeas are my favorites--bi can you post that recipe for doubles here if you still have it- those chickpeas were the best!

i want some sumac, the Lebanese place I eat at @ work uses it on their salads and its F'in GREAT! I ask for it to use in my hummus and my gyros and just about anything I get there, LOL

Sumac yum! Is there a middle eastern market near you?
I was able to find all kinds of exotic stuff for cheap like orange blossom water. Its amazing.

Not that I know of .. I have seen an international market on my way to work that I plan on searching for. There has to be one near my job, its a highly populated middle eastern area ... it has to be!!!

I was able to find all kinds of exotic stuff for cheap like orange blossom water. Its amazing.

I found my Sumac!! I asked the restaurant where I see them use it where do they get it from, and the place was right near my gym.

I stopped it and grabbed some, and it was CHEAP! I'm in love!!

I can cook but I don't use recipe books or measuring spoons.

Chilled Cucumber Soup Recipe

Ingredients:
2 large cucumbers, peeled and de-seeded
1 small onion, chopped
16 fl oz milk, heated
8 fl oz vegetable stock, heated
½ tsp nutmeg
1 tbsp plain flour
Salt and pepper to taste
1 tbsp butter

Chop the cucumber into pieces. Then heat the milk gently in a saucepan.

Meanwhile, in a large skillet melt butter and saute onion and cucumber in minutes. Add flour and cook one minute stirring constantly. Remove from heat.

Slowly pour the hot milk and broth, stirring constantly. Add nutmeg and season with salt and pepper.

Bring the soup to a boil quickly, reduce heat and simmer for about 20 minutes. Remove from heat and let soup stand for some time, until cooled. Mix in blender and adjust seasoning.

Chill the soup in the refrigerator for at least 20 minutes and serve with a sprig of fresh mint and a swirl of cream.
